HA! totally amazing lunch!
been craving tuna melt recently. so i decided to go with it today after class. thought i'd give it a twist , dear to my tummy and add mushrooms.
it's been a GREAT week of vacation and good fun!
Now time for my serious face. Maybe Ill log on Monday at 6pm EST and make a yummy dessert -- maybe some
poked vanilla cake with strawberry jelly
need :
pre-made vanilla cake mix
2 eggs
vegetable oil
water
strawberry jello
very simple. yet very delicious =)
note to self: when i get pregnant remember to use "i laughed so hard i almost went into labor"--sPerAnZa.
Ingredients
2 cups sifted flour
2 cups light brown sugar, packed
1/2 cup butter
1 egg, well beaten
1/2 cup additional sifted flour
2 teaspoons baking powder
1 teaspoon cinnamon
3/4 cup milk
powdered sugar, optional
Preparation:
In a mixing bowl, combine sifted flour, brown sugar and butter until crumbly. Set aside 1/2 cup of the crumb mixture for topping. To the crumb mixture in mixing bowl add the beaten egg, additional flour, baking powder, cinnamon, and milk. Blend well with electric mixer on low speed. Spread the batter evenly in a greased 8-inch square pan. Sprinkle reserved crumbs over the batter and bake at 350° for 35 to 40 minutes,or until a wooden pick or cake tester inserted in center comes out clean. Cool and dust with powdered sugar before cutting, if desired.

I need a new mouse. Mine double clicks like a whore. I checked my mouse settings, and everything is normal. This ish is driving me up the wall....Thought this mouse was supposed to be amazing (razer copperhead)....well it was amazing when I got it like 3 years ago. Oh WeLL

I cooked ALLL of the thanksgiving feast today for my family. I am kind of proud. Started I was just going to do desserts, but I ended up cooking EVERYTHING. Gave my mom a break this year...she deserves it. But now, I am in pain, and tired as hell LOL
So, Here's what I made

Turkey with italian pork and turkey sausage, and spanish sausage and chestnut stuffing.

I know this might sound a bit ignorant, especially after I've practically been raised in the US. BUt I've never had an American Thanksgiving. My Thanksgiving consist of pretty much Cuban culture adapted to the American Holiday.
So...Educate me...What do you eat cranberry sauce with?? Ive heard people add it to the turkey, or is it for dessert, aside form the pies?
There is a lot of sweet stuff used for the foods, which I think it's great...but Its not something I see everyday!
This thanksgiving I plan on making certain things, add certain dishes to our dinner...and one of them is this really good cinnamon cranberry and apple sauce...but I dont know what to add it to!! LOL

I usually eat cranberry sauce just on its own with my turkey........ but then again I';m strange like that
Turkey or baked chicken.
It's delicious.
You can make it from scratch with a large whole bag of whole cranberries, 1/2 cup sugar, a cup of water, and a couple of diced up apples (peeled)...cook over low heat until it comes to a boil for 10 minutes and the cranberries "pop".
I eat my cranberry sauce with slivers of turkey on Thanksgiving...and I like fresh sauce as opposed to the jellied stuff.
I've also been known to eat cranberry sauce instead of apple sauce with muh pork chops...mmmm...;)
Canadians and Americans celebrate Thanksgiving for slightly different reasons too.
Originally Americans celebrated Thanksgiving to give thanks to god that the Pilgrims who landed on Plymouth Rock survived their first brutal winter...the food they ate was indigenous to that part of the continent and also included some Aboriginal dishes too.
Canadian Thanksgiving traditions are closely connected with the traditions of Europe whereby there are harvest celebrations in October. The first Thanksgiving in Canada occurred 43 years before the Pilgrims landed in the U.S. Again it was to give thanx for a safe arrival to this continent. Generally Thanksgiving is known as "a day of general thanksgiving to almighty God for the bountiful harvest with which Canada has been blessed."
I know alot of people who don't celebrate based on their faith or spiritual beliefs...and that is ok too.
I eat it separate. I don't like the taste of it on anything really but by itself I think it's pretty good. Kind of sweet and tangy. :P Yumm.....
As a garnish for my turkey. It's also great for left over turkey sandwiches! :)
It's also freaking amazing with HAM.

Total: 3 hr 15 min --> but i made it in like an hr and 20 mins cuz im THAT badass ;)
Ingredients --Pie Crust: (i bought a pre made crust just for time sacing purposes)
* 2 cups all-purpose flour, plus more for dusting
* 5 teaspoons sugar
* Pinch kosher salt
* 12 tablespoons cold unsalted butter, cut into small pieces
* 2 egg yolks
* Ice water
For the filling:
* 2 whole sugar pumpkins
* 6 bananas
* 3 large eggs, plus 1 egg white
* 1/2 cup sugar
* 1 teaspoon ground cinnamon
* 2 tablespoons unsalted butter, softened
* 1/2 teaspoon freshly grated nutmeg
* 1 cup heavy cream
* Pinch kosher salt
For the meringue topping:
* 4 large egg whites
* 6 tablespoons confectioners' sugar
* 1/4 teaspoon cream of tartar
* Pinch salt
Directions
Crust:
Combine the flour, sugar and a pinch of salt in a large bowl. Mix in the cold butter with a pastry blender or your hands until the mixture resembles coarse crumbs. Work in egg yolks and 1 to 2 tablespoons ice water until the dough holds together without being too sticky. If it's still crumbly, add more ice water, 1 teaspoon at a time. Form into a ball, wrap in plastic and refrigerate for at least 30 minutes.
On a floured surface, roll the dough into an 11 to 12-inch circle with a floured rolling pin. Ease the dough into a 9-inch pie pan, pressing firmly into the bottom and sides. Trim the excess dough, then pinch the edges. Refrigerate until ready to fill.
Filling:
Preheat the oven to 350 degrees F.
Split the pumpkins down the middle and scoop out the seeds. Arrange on a roasting tray, cut side up, and roast for 20 minutes. Remove the pumpkins from the oven and lay bananas (in their skins) around and between the pumpkin halves. Return to the oven and roast for another 10 minutes. Remove from oven and let cool slightly before handling, about 5 minutes.
Scoop out the pumpkin flesh and add to a food processor. Peel the bananas and add the flesh to food processor as well. Add the 3 eggs, sugar, cinnamon, 2 tablespoons butter, nutmeg, heavy cream and salt. Puree until smooth.
Put a baking sheet on the bottom oven rack and preheat to 375 degrees F.
Pour the filing into the prepared pie shell. Lightly beat the egg white. Brush the pastry edges with the egg white and sprinkle with a bit of sugar. Carefully arrange the pie on the preheated baking sheet, lower the oven temperature to 325 degrees F and bake it until the pie is set but still jiggles slightly, about 50 minutes. Remove from the oven and let cool completely.
Topping:
Beat the egg whites, powdered sugar, cream of tartar, and a pinch salt in a large bowl with an electric mixer until glossy medium peaks form, being careful not to over beat.
Spread the meringue mixture over the top of the pie, covering right to the edges. Using the back of a spoon press lightly into the meringue and pull up on the spoon to form peaks all over the surface of the meringue (alternatively you can use a piping bag with a large star tip if you choose).
To cook the meringue, preheat the broiler with the rack in the highest position. Put the pie under the broiler and broil until the meringue is set and golden brown, about 7 minutes, watching carefully to avoid burning, as it cooks quickly. Remove from the broiler and cool before serving.
