Nothing exciting or drama causing. Just a positive self note, and a cap in my feather.
I went into work today did all the usual of cleaning up Saturday nights residual, busted out the small lunch rush with the other cooks and got to prep work. I baked brownies that we needed for deserts on Friday before leaving. I found them merely covered with plastic wrap and in the same pan they were baked in. I wasn't happy, but eh, you can't expect a bunch of drunks and burn outs to give a damn about what they do when the owner/manager doesn't give a damn. I digress, I decided to cut out the brownies and wrap them up for use like we are supposed to. They are still soft, surprisingly enough, and NOT sticking to the pan as I cut and pull them out with the brownie cutter. It was a nice moment, because I was reminded that I am still good at what I do. I don't bake often, because it's a bitch, but i'm glad I still know how to when I do.
Then I come home, and make apparently meatballs so delicious that even Jadee will eat them. I say this because she does not eat meatloaf or meat balls. It is a consistency issue for her, i'm trying to work around it lol. It is a good day for my cooking ego. I needed it, cause I'm getting burnt out at work. I love what I do, but when people around you seem to not care about quality and customer satisfaction it gets difficult.
Another point, as many of us probably watch a lot of those devilishly delectable cooking shows on the food network I will randomly put my own cooking tips in here. Starting with....
If you are making something out of the box that you haven't made before, or are not sure about, look at the pictures on the box. Such as Brownies, if it mentions mixing ingredients in the bowl and you aren't sure which tool to use, look at the picture. Large wooden spoons, or semi-stiff rubber spatulas are perfect for something the likes of brownies. You don't want to OVER mix things, if you do you can end up with an undesired confection.

It's good to see there are chefs that still care. Our guys run out of the kitchens when it comes to closing time. It irritates hell of me specially if they leave food out that they know they are supposed to put away!
