It feels so otherworldly this morning. The wind is blowing hard. Rain is slanting into the windows, and the chimes are eerily sounding from the back garden.
My husband has already left for work and my daughter has gone to a student council meeting. It feels as if the world has swallowed everyone else up and only I am left in this strange new world.
The new father-in-law is leaving this afternoon. He's been so fun and I'm going to miss him. I got pretty lucky. Of course, even if his family were awful, I got pretty lucky since there's a big puddle between us...no surprise drop-in visits from the family.
I will say that it's pretty funny hanging out with Brits in the U.S. They get LOADS of atention. I've watched waitresses get flustered like they were movie stars, just because of the way they pronounce "tomato" or "water." Stabb's dad is fresh off the boat, so his accent is still pretty strong. He thinks his son is beginning to sound American. I nearly choked when he remarked that Stabb had a drawl. Heeheehee
Our folks got on well, too. They love art and travel, so the conversations never felt awkward. I don't think you could ask for much more when you bring two families together. Even Meatball fell in love because Stabb's dad is generous with back scratches, the true way to Meatball's heart.
Help! I need ASAP a sweet potato recipe that is savory, not the candied version that is sweet and often has pecans.
If you can direct me to such a recipe, I'd be grateful. I'm having poo for luck.

I was going going to make my own mashed sweet potatoes, sans recipe. I usually go without recipies.
or just bake them @ 350 for 2 hours wrapped in foil and serve with butter and cinn sugar.

A perfect side for any roasted or grilled meat or poultry entree.
Servings: 6
• 4 medium sweet potatoes, peeled and cut into 1 1/2 inch slices
• 2 tablespoons olive oil
• 1 tablespoon fresh thyme, chopped
• 3 cloves garlic, minced
• 1/2 teaspoon crushed red pepper flakes
• 3 - 5 sprigs thyme (for garnish)
Heat oven to 400 degrees F. In a zip lock bag toss the sweet potatoes in the oil, thyme, garlic and pepper flakes. Transfer to a rimmed cookie sheet. Garnish with thyme sprigs and bake until tender about 45 minutes. Serve hot.

How to make sweet potato souffle:
Brush the inside of a large soufflé or deep casserole dish with 1 1/2 tablespoons of softened butter. Sprinkle the buttered surface evenly with Parmesan cheese and set aside the dish.
Preheat the oven to 375F. In a large saucepan over medium heat, sauté the onions and garlic in the remaining butter until they turn translucent and tender. Add the flour and salt to the tender onions and garlic. Cook the flour, whisking constantly, for 30 seconds. Add the milk to the flour and cook, still whisking constantly, for about 4 minutes, until the mixture thickens. Add the sweet potato puree, dried thyme, and black pepper and continue cooking over medium heat for 1 minute. Remove from the heat and stir in the Gruyere cheese.
Whisk ½ cup of the hot sweet potato mixture into the egg yolks, and then add the egg yolk mixture back into the hot sweet potatoes, stirring to completely incorporate. Beat the egg whites on high speed until stiff peaks form. Stir one-third of the egg whites into the sweet potatoes, and then fold the remaining egg whites into the mixture. Spoon it into the prepared dish and bake for 30 minutes, until the sweet potato soufflé is puffed up and cooked through.
This sweet potato souffle makes 6 servings.

2 tablespoons dried parsley (optional)

This recipe's Ingredients were scaled to yield a new amount. The directions below still refer to the original recipe yield of 4 servings.1.Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
2.In the prepared dish, make a single layer of sweet potato slices. Place a few onion slices on top, dot with butter, and sprinkle with salt and pepper. Repeat, alternating layers of white and sweet potatoes.
3.In a small bowl, or measuring cup, combine flour and broth. Pour over potatoes.
4.Sprinkle cheese, bread crumbs and parsley over the potatoes. Dot with remaining butter. Cover.
5.Bake in preheated oven for 1 hour, or until potatoes and onions are soft.
Savory Sweet Potato & Poblano Rustic Tart
If you don't feel like making the pie crust, skip it. This dish would be great as a composed roasted sweet potato dish or cooked as a gratin or casserole. You could even bind the ingredients together with a custard as sort of a crustless quiche.
Makes one 9-inch pie
9-inch uncooked pie crust (recipe), rolled into a 10-inch diameter circle and refrigerated
3 medium sweet potatoes
3 to 4 medium poblano or Anaheim peppers (or substitute 1 tablespoon chopped canned chipotle peppers)
4 whole shallots or 2 small white onions, quartered
1/2 cup Mexican crema, or sour cream
1/3 cup chopped cilantro
2 tablespoons chopped green onions
a pinch of Mexican oregano
a pinch of cumin seeds
salt and pepper
wedge of lime
Wash the sweet potatoes well, pat dry, and prick with a fork several times. Place on a baking pan with the shallots or onions. Drizzle the shallots or onions with a little olive oil and sprinkle with salt and pepper.
Roast at 400 degrees F until the sweet potatoes are very tender and beginning to caramelize. If the onions begin to burn before the sweet potatoes are done, remove them from the baking tray and set aside.
Cool cooked sweet potatoes completely.
When cool, slip the skins off the sweet potatoes and cut into rough 2-inch chunks. (This step can be done up to several days in advance.)
If you have a gas stove, roast the poblano peppers over direct flame until blistered and blackened all over. Otherwise, you can broil them until they begin to blister. Place in a paper bag or wrap in foil and set aside to cool. When cool, rub most of the charred skin off the peppers, deseed them, and -- with your fingers, if your peppers aren't of the hot variety -- tear the peppers into strips. Set aside.
When your vegetables are cool, remove your pie crust from the refrigerator. Roll out and be sure to patch any holes. Drape your circle of dough over your rolling pin and transfer to a pizza pan or baking sheet if not already on one.
Spread the bottom of the crust with the crema or sour cream, leaving a 2-inch border around the outside of the crust.
Next, spread the sweet potato chunks, the onions or shallots and the pepper strips over the crema. Sprinkle with salt and pepper, cumin, oregano, the cilantro and the green onions.
Fold the edge of the dough up over the top of the filling, pleating the dough as you work your way around the circle. Place the tart in the freezer for 10-15 minutes to firm up while you preheat the oven to 400 degrees F.
Bake the tart for 45 minutes or until the crust is dark golden brown. Remove from the oven, squeeze the lime wedge over the filling and allow to cool for 15 minutes before serving.
Serve warm or at room temperature.

Trust me, despite the fact my business is about technology, I would MUCH rather have a flying car than more advances in smart phones or netbooks...
...honestly, I could do without another gadget. But something that could help me travel around town without having to be on the same roads as holiday shoppers - now there is something useful.
