Went and saw 2012 yesterday. Not my first choice of movie, but it was what a friend wanted to see, and it was cheap ass Tuesdays so it didn't break the bank.



First of all, anyone else kinda sick of seeing disaster movies that only ever focus on America? It would be kinda nice to see how the people on the other side of the pond fare every so often... (and not just in a "oh, btw, heard from the Africans and they're doing ok, who woulda thunk it?" kinda way)



Secondly... arks????? ARKS???? WTF!!! Space program, people!!!! Sheesh!



Thirdly. Everest, 2012. Who will be there? Lol!

Crap! I have a lamington craving. All because I posted the recipe in our coven forum.



Mmmmm. Lamingtons....





Note this is the "cheaty" way to do it, to do it properly you have to make your own sponge cake.





Lamingtons



Ingredients



* 1 slab sponge cake (one day old)

* 4 cups icing sugar

* 1/3 cup unsweetened cocoa powder

* 2 tablespoons butter

* 1/2 cup milk

* 2 - 3 cups desiccated coconut



Icing



* Cool the cake for at least half an hour in the Fridge or Freezer, then cut into squares or fingers

* Combine the Sugar and Cocoa in a large bowl

* Heat the milk and butter in a saucepan until the butter is melted.

* Add to the sugar/cocoa mixture and mix to a fluid yet not runny consistency



Method



* Make a production line of Sponge Fingers, Chocolate Icing mixture in a bowl, coconut in a shallow container or plate, and a cooling rack with paper underneath.

* Using a fork dip the sponge fingers into the icing, roll it in the coconut covering it well, and then place on to the rack to dry.

* Once they have dried, place in an airtight container and leave to "mature" for at least a few hours, preferably overnight, before eating.





You should end up with something like this:

Yes they may sound weird, but trust me nothing beats a good lamington!
