So Maverick played Football with the boys this past weekend, and like all good football games end... 2 people ended up going to the hospital.



WOOT... this time Maverick was not one of them... and the other two are both doing well.. one broken nose, and one concussion. O.o I should probably explain the woot...



Maverick's been to the hospital too many times this year in the past 3 months alone... SO... that's why besides the 2 in question came over to play poker and I fed them... I taught myself how to make chili for the boys, homemad corn bread, banabread and chocolate chip cookies. All while they played poker at the "shack".



*WHEW* that was one full day in the kitchen about 3 dozen cookies, and 5 loaves of banana bread and 2 loaves of cornbread.



Today... was just working on stuff... am seriously considering many things... actually am still going through things in my head... so if I'm a little distant... well I'm learning to get my "shit" together....

What's cooking?



Mango curry chicken with veggies and rice steamed with dill and a touch of oregano...



How it's done...



Cook the chicken in olive oil with garlic and one small chopped onion. Then add the mango juice and all.



Once cooked: add 2 table spoons of sour cream or low fat: 2 table spoons of cottage cheese and 1/2 cup of milk



After it's all simmering add 2 tsps Turmeric, 2-3 tsps garlic salt or dried garlic, pinch of red pepper, pinch of salt and sugar to taste... should be spicy/sweet at same time



Simmer another 5-10 min





For dessert: Apple Pie :D

Memory of Strength

The unreal at times is more real than anything else.



It is time to remember the "faith" of doing, of following the tug that lead me to where I am. While there are things that are not ideal, I have to remember my strength...



For it is infectious, quiet and powerful.



I can create change. What I intend to do; I have done every other time. The only thing that truly holds me back,



is ME.



Still not certain what steps will occur, or where they will lead, but I remember the dream.



And it's calling me, reminding me of good and why I must continue. Proof of this is in the call my mother gave me this morning, in less than 20 days, we have found a new renter... and he is exactly what we were looking for last year.



Perhaps all of this had to occur so that the house would be open, when he was looking. If we had found someone else prior he would not have crossed our path. Why is this proof? Well he has put forth exactly what we hoped for, and it came from his boss and current landlord... icing on the cake? He wants to sign a lease at a higher rent and wants to do it ASAP.



If we do not ask for what we need, what makes us think that we will receive it? To receive, you must do... and the first step there- is to ask.

A friend had Maverick and I secret shop their store today. ACK talk about good and bad service... both working with each other. Bad thing, there is some serious customer service issues, someone there with dark hair *cough, cough* has an attitude. Good thing, is I now have a new Butterfly sparkly hair barrette.



I feel for my friend she has her work cut out for her... Starr, you so shine! :)



As for the rest, I'm not going out again this weekend, as I feel like pooh-pooh. Chills/fever you know with that lovely metalic taste in the back of your throat... SOOOOOOO



I'm taking Cold Snap every 30 min with EmergenC then going to bed. Worked well yesterday when I felt the same way, unfortunately I slept like poop last night. *Sigh*



So one more round of each and I'm off to bed. All I can say is Cold Snap is the BOMB! lol ;)

So I met one of the Fire Fighters today, it was fun to watch my office mate's faces get confuddled when I found out he knew my roomie.

Rear Ended

Well what I’ve feared has finally happened. Someone hit my car today while stopped at a red light. Thank goodness both Maverick and I were not hurt, and only my alignment seems to be damaged. But it’s amazing how one little thing throws off your entire day. 2.5 hours at the dealership to check out the car and total damage equals $162.00. I think the guy is getting off very lucky, although if he had his way I would not have had the car checked. BAH



You know especially with newer vehicles you should ALWAYS get a damage report because with how the cars are made, if you don’t you could end up totally screwed in the long run. So I got to sit and chat with people, while my day ticked away.



I have to say he hit us hard enough, my guess is he was going between 5-10mph, pretty fast considering it was a red light. That and Maverick saw the guy hang up his cell after hitting me. GRRR why is it that more providences and states don’t start making it illegal to talk UNLESS with headset. How bad is it to spend $40 for uber nice mic so that you can have both hands on the wheel and both eyes on the road? If your tire blows out, you’ll be thankful to potentially be able to save both your vehicle AND yourself. Seems like a minor investment… but then again I try to think ahead… even if it means I go without for a while. *sigh*



So now once I finish doing some work here in the office I get to start on the errands that should have been done earlier. Oh yeah, eating… since at the moment I am still on adrenaline… woot for being an athlete too many years… I might just have to go for a run because my body is NOT shutting down.

I am slowly starting to do so many of the things that I haven’t done in years… baking is by far something that I have enjoyed.



Perhaps that is why I started making bath salts… another way of “cooking” so to speak…



As for cookies and breads it’s been at least 4 years that have baked like this… it used to be just how I did things. Baked when watching tv… and got up early to walk the dogs…



Still not getting up early… lol doesn’t help that I’ve been staying up late does it? I hope that will change soon because I still feel “misplaced”.



Not in any bad way, just an adjustment period. Over all it’s been very good, I just now have to get that confidence up and get my “grove” on. For now... just more rest.

My favorite chocolate chip cookie recipe.



1/2 cup Butter or Margarine

1 cup packed Brown sugar

1 Egg

*touch of soda*

*touch of backing powder*

2 cups of flower

1 cup chocolate chips

5 candy canes *crushed*



Mix butter, sugar and egg. Then add soda, powder and flower. If mixture is too dry, then add a touch of water. Fold in the chocolate and crushed candy canes.



Preheat oven to 375 and place cookies on non-greased sheet, bake 10 min.



For a little extra spice, add a touch of vanilla and peppermint extract.

Painting...

So yesterday I painted our dinning room... and I have say YAY me for choosing that colour 2 years ago for my dinning room in seattle... and thank goodness I didn't paint it there... as it seems perfect for here!

1. put hair into ponytail.. and not just leave it loose as having hair fall into paint can is messy *yes that did happen*



2. Remember to eat... otherwise your cutting in the corners and such gets sloppy from shaking hands...



Now all we need to do is finish hanging the boarder and that room is done....

Well my muffins officially SUCK.

Might give as treats to the dogs... but the waffles and banana bread rock...



Guess I'll just have to make cookies and spilt pea soup tomorrow :) Those I know I can do... Potential job change on the horizon.. I don't want to jinx myself, so I'll just say I'm very hopeful YAY YAY YAY



As for the Seattle update.. some may remember my rants of the renters from Sept... well they gave their notice Jan 1st.



Seems our warnings to "keep curtains closed, and heat OFF " when they aren't home were ignored. They went through a tank of oil in 2 months. So are leaving the house because they can't afford to heat it.



Not only that...



They put an ad in CraigsList that said, "We're moving, take over our lease".



Um 3 things on that.



1. Their lease says, NO SUBLETTING



2. They are not the owner's adgent... that would be ME.



3. I do NOT want them representing us, or attempting an illegal sublease.



4. They denied us access to show the house because... get this... THEY were doing an open house. Landlord Tennant law says that is BIG NO-NO since they are supposed to let us show the house with only 24 hrs notice, and they can't be bothered to call my mother back.



Errr that was more than three…



Well I am now offically bad guy *about time, since they think I'm nice* because my mother told them I was going to look into legal action if they did not desist. Darn tooting I was.



What moron calls a landlord saying, "Call us back it's urgent"... and then can't bother to answer the phone OR call us back after 4 messages for 3 days? Then gives the excuse... oh, my minutes are low on this phone... um, not so urgent is it now?



OR calls the landlord to ask them to pay for their heat because they didn't plan on paying for it during the winter and Christmas just happened and their daughter's birthday is in a week, oh can you call back as we are at dinner?



ACK... good riddence. It is a clear cut case of nice people with no brains.



I hope this next round is better. As they SO needed to go. Also my mother was VERY NICE when their potential new landlord called. She said they didn't return calls for several days and paid their rent.



NOT: they bounced a check, paid their rent LATE every time.

Sheesh.

opsy that ended up being a major rant instead of just a side note.... *sigh* guess it's beddy bye time for me!

A Baking type of day

So I have now made Maple waffles, Banana waffles all frozen for use during the week.



I have made 4 loaves of Banana bread, and am about to make Banana muffins for our morning foods.



Next the chicken, rice and beans. Woot! I have missed baking, can't wait till tomorrow when I get more done... YAY having a kitchen again!



In truth it's been 4 years since I've baked, yes it seems things are getting better- things like this just confirm that I have made the right choice with this move.
