If you make your pasta sauce from scratch like I do, I found the best way to deseed the tomatoes after you flash boil and peel them is to slice them in half and use a grapefruit spoon to cut and scoop them out! :D



Yep, pasta for dinner, along with homemade bruschetta! YUM!

I forgot to add this tip to the bean dip recipe.... I use Frito's scoops instead of tortilla chips. I think it tastes way better!!!

::FOOD PORN:: Hot Bean Dip!!!







I used green onion from my garden, I used 2, 8oz bags of cheddar/pepper jack. One in and one on top. I topped with various peppers of various heats from my garden on top. Also, I make my own taco seasoning...

**Taco Seasoning**

1 TBL chili powder

1/4 tsp garlic powder

1/4 tsp onion powder

1/4 tsp crushed red pepper flakes

1/4 tsp dried oregano

1/2 tsp paprika

1 1/2 tsp cumin

1/2 tsp sea salt

1/2 tsp coarse black pepper



Blend together in mortar and pestal or food processor and use as you normally would use the packet taco seasoning. I make taco cheese out of it too. I shred my cheese and put it in a ziplock and sprinkling some in then shake.



**Hot Bean Dip**

INGREDIENTS:

1 (8 ounce) package cream cheese,

softened

1 cup sour cream

2 (16 ounce) cans refried beans

1/2 (1 ounce) package taco seasoning

mix

5 drops hot pepper sauce

2 tablespoons dried parsley

1/4 cup chopped green onions

1 (8 ounce) package shredded Cheddar

cheese

1 (8 ounce) package shredded Monterey

Jack cheese

DIRECTIONS:

1.Preheat oven to 350 degrees F (175 degrees C).

2.In a medium bowl, blend the cream cheese and sour cream. Mix in the refried beans, taco seasoning, hot pepper sauce, parsley, green onions, 1/2 the Cheddar cheese and 1/2 the Monterey Jack cheese. Transfer the mixture to an 8x12 inch baking dish. Top with remaining Cheddar and Monterey Jack cheeses.

3.Bake in the preheated oven 20 to 30 minutes, until cheese is slightly browned.
