Rice the old school way. That is right on the stove not in a steamer or rice cooker. This is just plain white rice. I use 2x the water to rice.
For 2 people,
2 cups water
1 cup rice
1Tsp butter
1/4 tsp salt
In a 2qt sauce pan bring water and butter to a heavey boil. Add salt and rice and stir just to makes sure nothing is sticking together. Reduce heat to low and cover. Set timer for 25 minutes. When the timer goes off REMOVE FROM HEAT, fluff with a fork not a spoon or anything else just a fork then serve.
For more just keep the water to rice ratio (THE RATIO NOT THE AMOUNT) the same, 2x the water to rice. Butter, salt and cook time will remain the same.
My Green Chili Verde.
2lbs tomotios
2 hatch chilis aka anaheims
3 jalopenoes
1 bell pepper
1 head of garlic NOT 1 CLOVE
2 cans chicken broth
1 bundle cillantro
1ts ground cummin
1ts salt
Roast evertything minus broth, cillantro, cummin and salt. Take everything minus the skins from the peppers and run it thru a food proccessor, best done in 2 stages. It doesn't matter how just blend it all. Add to a 6qt pan and bring to a light boil and simmer for 2hrs salt to taste.

That is just the basic chili. You can always add COOKED pork or chicken at the boiling step. I season, flour and fry for my method of cooking.
i make this too, albeit i use 2 jalapenos and 2 onions, no green peppers or cumin. i use knox powdered chicken buillion to taste.

yup...use an Immersion Blender to get all that shit pureed to a nice, spicy, green Goodness.

Requiem and Wild, please note this makes for spectacular Enchiladas Verde Sauce as well, and freezes nicely...just remember that any container you freeze it in might expand, so don't fill it to the top.
I can it. It also mixes well with cream cheese and put on top chicken or pork and baked, on top burritoes, and on top of an omlette.

1 jalopeno (with seeds for more heat)
1 minced garlic clove
Mix everything add steak to a ziplock bag and let sit 20 minutes per side. Then cook to desired yumminess.

This works pretty fucking well with chicken, only I used a bit less brown sugar, and habaneros instead of jalapenos. (Two. I like heat).

I have a rice cooker. It's the only way to get brown jasmine rice sublime-ly perfect.
