Hedgehog meatballs

Ingredients:

1-2 packs of ground meat

2-4 cups of white rice

Red and green pepper

Pumpkin seed oil

2-4 onions



Preparation:

1)You can preheat an oven to 350 degrees C

2)Put the rice to cook in a rice cooker(if you don't have one no big deal.A normal pot will do)

3)Take the ground meat,mix it with salt,pepper and a dash of olive oil

4)Slice the red and green peppers into very small cubes and mix into the meat

5)Once the rice is done,mix it into the meat as well

6)Add a dash of lemon juice,the proceed to roll the mixture into spheres of around 2-3 cm in diameter

7)Once you have used up all of the mixture,put the meatballs into an oven(or you can cook them in a pan)

8)Cook until they become brownish outside

9)Serve hot with mustard or horseradish

Eggy in a basket

Now despite the strange and somewhat childish name this is a very fun and very simple breakfast food.



Ingredients:

Eggs(one per serving,whisked or normal)

Slice of bread(I prefer rye bread,but any toast like

bread will do)



Preparation:

1)preheat a pan and pour a bit of olive oil on it.Only olive

oil,no butter no sunflower oil

2)Take a slice of bread and cut out a quarter sized circle

in the middle of it,put the bread on the pan

3) carefully pour the egg into the circle in the bread

4)Sprinkle salt and pepper on the "Eggie"

5)30-40 seconds after one side of the egg has been cooking

turn the bread over to cook the other side

6)Best served with mustard and red pepper

Onion-Ham Omellete

Ingredients:

4-6 eggs

6 pieces of ham

One large green onion

40grams of ground Parmesan



Preparation

1)Take a large,deep bottom pan,pour oil on it and put on a high heat

2)Chop the onion and ham into small dice like Piece,add a handful of ground Parmesan cheese and mix together in a bowl

3)Break the eggs into a second bowl and whisk them until the yolks and Whites mix together

4)Put the chopped onion and ham onto the pan and cook for a Minute or Minute and thirty seconds

5)Add the whisked eggs until they cover the onion and ham

6)Add the ground Parmesan right before cooking

7) Cook on a medium heat for 3-5 minutes and then put the pan in an oven to cook the top of the omellete

8)Add more Parmesan to taste

Candied Pineapple

This is really easy to make and makes a super side to vanilla ice cream.



Ingredients:

One whole,fresh pineapple

500 grams(+/-) of cane sugar

1-3 Cups of water



Preparation:



1)Take a large,deep bottom pan and pour in 1-1 1/2 Cups of water

2)Slowly bring the water to a light boil

3)While you`re waiting for the water to boil clean the pineapple and slice it into thin rings

4)Once the water is boiling,put the pineapple rings into the pan,add another Cup of water and slowly mix in the sugar(There should be enough sugar so that the water turns syrupy)

5)Once you see that the sugar has begun to Caramelize,lower the heat and slowly wallow the pineapple rings in the caramely water

6)Once they are heated take them out of the pan and onto a plate.Pour the remaining caramelized liquid on top

7)Add a Scoop or two of vanilla bean ice cream and the pineapple is ready to serve



Alternative:

On step 7,you can put the pineapple on the Counter and wait for it to cool,if you would like to eat it with coffee or wine.But it goes best with Whisky in this form

1)Preheat an oven to 350 degrees C

2)Layer a small oven tray with baking paper

3)Wash the fish under room temperature water

4)add Rosemarin,a splash of olive oil and a splash of Lemon Juice on to the fish

5)Put the fish into the oven and cook it at 300 degrees Celsius for about 25-30(sometimes more depending on the thickness of the fish)

6)When finished serve with salad and a dash of White wine mustard

Hedgehog Kokos

Ingredients:

3-6 eggs

500g of ground coconut

2 large slabs of milk chocolate

1 1/2 to 2 Cups of flour

1 Cup of milk



Instructions:

1)Preheat the oven to 300 degrees

2)In a large bowl mix together the milk,eggs and flour

3)Blend together until a batter is formed

4)Break the milk chocolate apart and put it in a pan,to melt

5)Once melted,pour into the batter and mix until the chocolate is evenly distributed

6)Roll the batter into spheres and lightly brush the spheres with oil

7)Sprinkle a generous amount of ground coconut on each sphere and then put the spheres into the oven

8)When the coconut turns brownish golden your hedgehog Kokos are ready

9)They can be served steaming hot with a Scoop of vanilla ice cream or cooled with whipped cream

Island Wok

One package of cut chicken breast

One can of candied pineapple(or one fresh pineapple)

Sweet carrots(1 big carrot or 10 Little ones)

One green/red Pepper

Soy Sauce

black pepper

Salt

Paprika(ground)

spicy red ground pepper

One teacup of fresh Peanuts(unsalted)



Instructions:

1)Take out the chicken breast pieces and cut them into thin strips,after which mix together salt,black pepper and

Paprika

2)Apply this mix to the chicken breasts,rubbing it into the meat

3) Cut the pineapple into small cubelike pieces and set aside(if using canned pineapple,drain and set aside in a bowl)

4)Take the carrots and if using one large carrot,cut into 2mm(approximately) pieces.IF using Baby carrots,you can chop them or just throw them in whole

5)Fry the chicken on a normal pan until it is throughoutly cooked,set aside on a plate

6)Take a Wok(or a pan with very thin walls) add oil and throw in your vegetables,pineapple and peanuts.Let stew over a low fire

7)Add cooked chicken breast,constantly mixing it with the vegetables and Peanuts

8)In 3-5 minutes the Wok is ready



PS Rice is always a good side
