Fiesta chicken burritos

1 1/2 pds boneless skinless chicken breasts

1 can(15 oz) whole kernel corn ,drained

1 can black beans drained ( 15 oz)

1 can 10 ounce can diced tomatoes and green chilis undrained .

1 jalapeno seeded and finely chopped

3 tbs ground cumin

1 tsp salt

1 tsp paprika

1/2 tsp black pepper

dash crushed red pepper

dash cayenne pepper



1pk 8 ounce cream cheese

tortillas



optional toppings sour cream, shredded cheese , shredded lettuce ,chopped tomatoes.



place chicken breast in a 4 qt crock pot add corn black beans tomatoes jalapeno and seasoning ... cover and cook 4-5 hrs til chicken is tender .. shredd chicken .. add cream cheese .. cook 15 min longer and stir cream cheese in ..



Add filling to heated tortillas or use with corn chips .. is great !!

Ingredients



Cake:

1 (1-pound) box graham crackers

2 (3 1/4-ounce) boxes instant French vanilla pudding

3 1/2 cups milk

1 (8-ounce) container frozen whipped topping, thawed

Frosting

1 1/2 cups confectioners' sugar

1/2 cup cocoa

3 tablespoons butter, softened

1/3 cup milk

2 teaspoons light corn syrup

2 teaspoons pure vanilla extract



Directions





Butter the bottom of a 13 by 9 by 2-inch pan. Line with whole graham crackers. In bowl of an electric mixer, mix pudding with milk; beat at medium speed for 2 minutes. Fold in whipped topping. Pour half the pudding mixture over graham crackers. Place another layer of whole graham crackers on top of pudding layer. Pour over remaining half of pudding mixture and cover with another layer of graham crackers.



For frosting, blend together sugar and cocoa. Add butter and milk, mixing well. Add corn syrup and vanilla. Stir until creamy. Cover cake with frosting and refrigerate for 24 hours.

homemade peanutbutter eggs

8 oz cream cheese

1 1/2 sticks butter

12 oz creamy peanut butter

2 pounds 10 x sugar

1 tbs vanilla



Mix all ingredients and form into 48 eggs.



Melt 2 pds of coating chocolate wafers in a double boiler .. Do not over cook chocolate ...start coating eggs as soon as chocolate is melted ..



tips .. use a fork to dip the eggs and place or parchment paper .



if you want to make coconut eggs replace 1 pd of coconut in place of peanut butter and use coconut extract instead of vanilla



white chocolate works great !

Thank you for posting Mina!!!!! Danny brought home some of these eggs from one of his coworkers and DAYUM the peanut butter ones are awesome!! I am so gonna use this recipe.

they are so good and easy to make you'll never want another reeses peanut butter cup again !

and you can do these for christmas just make lil balls and put jimmies or sprinkles on them .. :)
