The diet is still going well.
I made a yummy dinner last night.
A nice little mixed greens salad with a rosemary vinagrette and pan seared Sea Scallops with a Balsamic Vinager reduction. MMMMM!
Yesterday moring Gina told me she found that our scale was messed up on Monday. She had me re-weigh myself and it turns out I weighed in at 240.5! WOOT!
Total weight loss after 2 weeks 12.5 lbs!
Had and interesting lunch yesterday. A group from work visited the R&D center of a major ink manufacturer to run some trials and have them present some new technologies for us to consider. They brought in lunch for us. As it turns out our Director of R&D is also on a low carb diet and ate his carbs for the day at breakfast. So the two of us took a few sandwiches and only ate the meat, lettuce and tomatoe...leaving the bread and forgoing the condiments! I have to say the pasta salad, cole slaw and italian pasteries were awefully tempting.
Skipped a few reports over the weekend, nothing terrible not worthy menu wise.
Today SUCKS! We had our morning weigh -in and I GAINED a pound! WTF?
It really pissed me off. Up until two weeks ago I was the same weight for about 8 months - even with eating bagels dripping with butter every morning, potatoes with dinner, oreos before bed.
Now a second week of veggies and lean protien and I GAIN a pound? GRRRRRRR

It happens. Gaining one pound isn't something to worry about. Gain three or so, you'll need to revise what you're doing.

Another good day. Although a guy at work was selloing baked goods his wife made and put a big container right outside my office. I had to walk by yummy looking brownies, cookies and pumpkin bread all day!
I made a chicken stir-fry with snow peas, broccoli, celery, green peppers, onions and garlic. It was yummy!
Good day - nothing new food wise.
We did a repeat of the shepher's pie for dinner.
Another good day with one bad note and another great dinner.
First the bad - For AM snack I had fat free cream cheese to spread on cucumber slices. For some reason the general lack of flavor added to the textures made me want to hurl. I ate 3 slices and had to spit out the 4th before I blew chunck all over my office. Oh well!
For dinner we had Pecan Crusted Flounder Filets with Broccoli Rabe sauted with garlic and Olive Oil. MMMMM
Very good day - no cravings or hunger pangs at all.
Very tasty dinner - although it really didn't look like much!
Gina made Turkey meatloaf - with white beans in it, plus no breadcrumbs. It had to be baked in a loaf pan as it wouldn't hold any shape except a puddle when raw. After being removed from the pan it didn't fare much better, shape wise.
Taste wise it was amazing! We had it with mashed cauliflower which can almost fool you into thinking they are mashed potatoes.
A good day.
Only 1 special thing to note.
For dinner Gina made a Vegatable Moussaka! OMG it was amazing!
Eggplant, lentils, garlic, onions with a psuedo Béchamel sauce. I just tasted amazing.
And picky Dave went back for 2nd and thirds even AFTER he found out what was in it!
And I forgot to mention that Gina was a 6.5 lbs lost in the morning.
Also - I must appologize to Mori. I think I blasted away your comment when I edited yesterday's entry. Thanks for the encouragement.

I was down to 247.5! So I've lost 5.5 lbs in 6 days! Not so bad.

I'm getting sick of wriiting out the entire daily menu....and I'm sure whoever drops in to peek is sick of reading them also. From now on I'll just hit the menu highlights - or new stuff we made.
Saturday lunch I made "Creme of Broccoli soup" except, or course, there was no cream....Just 1/2 cup of 1% milk! But it came out nice, with some sauted onins and garlic blended in as well.
Saturday night dinner was awesome. Gina made "Shepherd's Pie"...without potatoes, crn or peas, of course! The meat was there - 97% lean ground beef - with edamame replacing the peas - and mashed whipped cauliflower replacing the mashed potatoes. It was delicious! And even David liked it...He went back for seconds and thirds!
Sunday was a challenge. We had the "Church year kick off breakfast" before church. It was always one of our favorite meals. Everyone bring out the sticky buns, monkey bread, french toast, cheesy eggy cassaroles, and lots of greasy pork products (sausage, bacon, scrapple). We decided to eat our normal breakfast at home and bring something which would serve as our snack. So Gina made a Frittata with red peppers, onions and low fat cheese. We each had a slice of that and a cup of coffee at the breakfast. It was a bit tough watching those around us pile in the pastries, ooy gooy full fat cheese and glistening breakfast meats. But I wasn't feeling sick all through church!!!
As it was the first Sunday of the month we had communion. As they were passing out the bread Gina turned around from the front of the Alto Section with a paniced look. She wanted to know if it was OK to eat the bread and drink the cup!!! I am pretty confident 1 gram of white bread and 1/2 oz of Welch's grape juice would NOT blow our diet!!!

Good day with no real cravings or hunger pangs.
I made it thorugh day 3 with no issues until just before bed time.
As you may or may not know I am an insulin dependant (Type 1) diabetic. I have to take insulin every time I eat. I normally would base my insulin doesage on the amount of carbohydrates I eat. Eating NO real carbohydrates makes it kind of difficult to judge how much insulin to take, so I have been taking just a tad more than my base dosage.
My blood sugar levels (which I test 4 times a day) have been awesome over the past 3 days. Lowest was an 85 and the highest was a 152. That may seem high for a "normal" person, but is just outside the control range for an insulin dependant diabetic.
I have noticed, however, that I "feel" like my sugar is high (tired, thirsty and "funny" inside) at a much lower level than before. I start feeling "High sugar" signs at abouut 135 wheras I would be up around 200 before feeling wierd only a week ago. I guess that's a good thing!
As I said the majority of the day was fine until about an hour before bedtime. I was DYING for a peanut butter and jelly sandwich! (A normal nightime snack for me before the diet). Instead I had 1/2 a tomatoe and a slice of pepper ham. Didn't quite satify the craving...But I made it to bed without stuffing my face with carbs!
BTW Gina is up to 6 pounds lost. I'm still not weighing myself until Monday.
Day 3 menu:
Breakfast:
Glass of V8, Mini- quiche (Slice of ham in a muffin tin - mix eggs, fat free "1/2 and 1/2", Low fat swiss and diced green peppers. Pour egg mix into ham in tin and bake for 20 min). Cup of coffee.
AM Snack:
Green pepper strips with Hummus.
Lunch:
Mixed greens with sliced cold London Broil and Dijon Vinagrette.
PM Snack:
Lettuce Ham and low fat swiss wraps.
Dinner:
Center cut pork chops sauted in EVOO, garlic and rosemary. Swiss Chard sauted with EVOO, Garlic and Lemon Juice.
Dessert:
Coco pepermint riccotta creme (Gina's invention!)
So, there ya go.

So by this afternoon I was not so damned enthused about this diet!
I ended up having to run some experimental trials in the plant along with the Tech Rep from one of our vendors today. As per the ususal the "1 hour" trial turned into a 6 hour ordeal and I didn't get to eat lunch until 2:00. (At which time the vendor wanted to take me out for a big lunch, but my will power prevailed!).
By the time I got home this evening, however, I was in a better fram of mind. Gina had gone against advise and weighed herself late this afternoon and has lost 4 lbs already! I am holding out until monday to weigh in!
Today's menu:
Breakfast:
Ham and low fat cheese omlette, V8 juice & coffee.
AM snack:
Low fat chedder/Jack cheese and Grape Tomatoes
Lunch:
Mixed green salad with tomatoes, Tuna and a vinagrette
PM Snack:
Pepper Ham and low fat swiss lettuce wraps.
Dinner:
Grilled London Broil, sauted onions and Heart of Palm salad.
Dessert:
Cocoa-Nut riccotta creame
We'll see how tomorrow goes.
Yesterday was Day 1 of the South Beach Diet.
On this diet the first two weeks are fairly restrictive in what you can eat....Basically NO carbs and only small amounts of "good" fats.
I started off YEsterday morning at 253 lbs. My goal is 185. I will only "weigh in" once a week - Starting next Monday Morning.
Yesterday's menu:
Breakfast:
1 cup V8 juice
2 egg Omlette with ham and low fat cheese
Cup of coffee
AM snack:
Celery sticks with Hummus
Lunch:
Green Salad with grilled chicken breast and vinagrette dressing
PM snack:
Oregano chicken with Hummus.
Dinner:
Roasted chicken, green beans, grilled green peppers and onions
Dessert:
Vanilla riccotta creame
It wasn't so bad!

On a serious note, the best part is... after you ween yourself of the bad carbs, you will find you don't want them as much as they actually hinder the body's ability to function properly.
