This is an approximate single serve recipe.
A heaping Tablespoon of mayo
a squeeze or two of pickle relish, to taste
enough orange juice (or lemon, or pickle, or apple, or a vinegar) to thin the dressing
1 1/2 cups flour
2 Tablespoons sugar
2 1/2 teaspoons baking powder
1 banana
2 eggs
1 cup milk
1 teaspoon vanilla
3 Tablespoons butter melted
Whisk together dry ingredients.
In a separate bowl, mash the banana.
In yet another bowl blend eggs, milk, and vanilla.
Add eggs mixture to banana and stir together; then pour banana mixture and melted butter into the dry ingredients and fold until blended.
This next part has always been a buggaboo for me.
I struggled with pancakes in a skillet because I either burned them or they didn't cook right.
Getting new pans made me brave.
I discovered that heating the skillet at a lower temperature before dropping the batter worked perfectly.
They still burned a little because it was my first time using a skillet in years but they were still very good.
I melted a little butter at 4 on the temperature dial and added more as needed to keep the cakes from sticking.

Orange juice I would try. Just to taste it. Mine has sugar. I like sweet slaw
