I can see now that I'm approaching the whole job thing the wrong way. I'm not going to get anywhere working at restaurants because everything about me will not match with the personalities of people prone to making a career out of kitchens. That sounds like a really elitist thing to say but I've worked in this field for most of my working life and I've only met a handful of people that worked in the food industry[even in high end restaurants] that seem to want to pursue something further. Most are happy stuck there and are happy to drag you down to their level in any way possible.
So I'm going to be applying to jobs in any other industry while honing and acquiring new skillsets.

Food industry employment for most are temporary jobs, something to tide them over until they find a job that suits them. I've worked many food service positions simply because they work around class schedule's.
I must agree with you many people think there's a future in the restaurant business, only if you're head chef or management over a 5 star restaurant in big cities pays off I think.

Good luck. Try some temp/perm agencies in around you, they always have decent jobs to be stepping stones into new career paths. Some even offer health insurance :)
