Do you like snack foods? Bacon? Tater Tots and cheese? Well then you'll love this:
Ingredients:
12 slices center-cut bacon, cut in half
crosswise.
24 frozen bite-sized potato nuggets
(such as Tater Tots®), partially
defrosted.
4 slices sharp Cheddar cheese, each cut
into 6 small pieces.
*OPTIONAL*-24 dashes hot pepper sauce (such as
Frank's RedHot®), or to taste
24 toothpicks
Directions:
1. Preheat an oven to 450 degrees F (230 degrees C). Line a baking sheet with parchment paper.
2. Lay each slice of bacon onto a work surface and place a potato nugget in the center of each bacon slice. Cut a slit down the center of each potato nugget and place a Cheddar cheese piece into the slit. Top each nugget with a dash of hot sauce. Wrap bacon around each filled potato nugget and secure the bacon to the nugget with a toothpick. Transfer the wrapped nuggets to the prepared baking sheet.
3. Bake in the preheated oven until nuggets are cooked through and bacon is crispy, 15 to 20 minutes.
Simple and oh such a good way to get a portion of your veggies!
Ingredients:
1 C Sour Creme
3 lge cucumbers
3 tbsp vinegar
3 tbsp water
2 tsp salt
1 tsp sugar
pepper to taste
Pare cucumbers and slice into thin slices. Add salt and let stand one hour. Squeeze cucumbers and rinse in water and let drain. Combine water, vinegar, sour creme and sugar. Mix with cucumbers and refrigerate until cold.
Voila!
Ingredients:
6 slices bacon, chopped
5 ounces cheddar cheese, cut into small cubes
2 1/3 cups all-purpose flour
4 teaspoons baking powder
1 tablespoon sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 cup Crisco, chilled
3/4 cup buttermilk
melted butter
Directions:
Preheat oven to 400 degrees F.
Cook bacon in large skillet over medium heat until crisp, about 4 minutes.
Transfer to paper towels to drain.
Reserve 2 tablespoons of bacon drippings.
Mix flour baking powder, sugar, salt and baking soda in large bowl.
Add chilled Crisco and cut in until mixture resembles coarse meal.
Add buttermilk, bacon drippings, bacon and cheddar.
Stir until dough is just combined.
Turn dough out onto a floured surface and knead several times until smooth.
Pat dough out to an 8 inch round and cut into 8 wedges.
Put wedges on baking sheet, spacing 2 inches apart.
Bake biscuits until puffed and golden, about 18 minutes.
Brush tops with melted butter.
Serve warm.
*Great served as a side to eggs.

Ingredients:
8 ounces butter, softened
1 cup sugar
1/4 teaspoon salt
1 egg, separated
1-1/2 Tablespoons amaretto liqueur
2 teaspoons orange rind, finely grated
2 cups flour
3/4 cup almonds, sliced
Preparation:
Preheat oven to 300 degrees F. and get out a 10 x 15-inch jelly roll pan.
Combine butter and sugar in a mixing bowl and beat until smooth. Add the salt, egg yolk, amaretto, and orange rind, and beat until blended. Stir in the flour and blend thoroughly. Spread and pat the dough evenly over the bottom of the ungreased pan.
Beat the egg white just until foamy, spread it evenly over the dough, then sprinkle the almonds over all. Bake for about 45 minutes or until lightly golden. Remove from oven and cut into 2-inch squares while still warm.
Yield: about 40 square cookies
I started this section of my journal long ago, then neglected the hell out of it. It's a new year and I have decided to put the journal to use. In this section you will still see its intended purpose; to share recipes, both drinkable and edible.
