Fettucini Alfredo Chicken Parmigiana



(To make this "light" the cheeses, butter and sour cream should be low cal or fat free and the milk should be skim)



2-3 Boneless chicken breasts

2 eggs

salt & pepper

1 1/2 C plain bread crumbs

oregano

basil

garlic (you can sub. garlic powder)

8-10 oz Fettucini

8 oz sour cream

4 oz parmesan

1 Tbs butter

1/4 C milk

Mozzarella (shredded or slices)



Preheat oven to 400 degrees.



Beat the eggs and add salt and pepper, set aside. Mix bread crumbs with salt and pepper to taste, about 2 tsp oregano, 1 1/2 Tbsp basil, and 1 Tbsp parmesan. Pound out chicken breasts to about 1/4 inch thick. Dip each breast in egg mixture and then roll in bread crumbs. Place chicken breasts in greased 9x13 baking pan and bake for 5-10 minutes a side or until done. To make alfredo sauce, melt 1 Tbsp butter in non stick pan and add half a clove or 1tsp garlic powder and 1 tsp basil. Once melted stir in sour cream, 4 oz parmesan, milk and salt and pepper. Let this simmer for about 5 minutes before adding to cooked fettucini noodles. To serve make a bed of the fettucini alfredo, add chicken breast and top with a slice of, or shredded mozzarella.



This is a quick easy recipe if you like Fettucini Alfredo. The real stuff is just loaded with heavy cream, fats, etc. But I like to make the light version of this one, it makes me feel like I'm indulging when I'm really not. Bon Appetit.

No, I don't have a typing lisp, this is a recipe that's very easy and if you have a demonic sweet tooth like I do, this is sure to satisfy it. This is an old recipe that I've modified and changed, both to make it taste better and to make it easier.



4 eggs

1 1/2 tsp vanilla

pinch of salt

2 cups Sugar

2 cups Flour

1 cup scalded milk

1 Tbsp melted butter

2 tsp baking powder

Peanut Butter

Milk Chocolate frosting or

Large Hersheys Bar (I highly recommend the frosting)

Caramel ice cream topping



Preheat oven to 350 degrees.

Beat the eggs till thick while scalding the milk and butter in a small sauce pan. Add the salt, sugar, vanilla, and baking powder and mix well. Then add the flour and milk and mix well. Grease or coat in non-stick spray a cookie sheet, and pour in batter. Bake for 20-25 minutes or so, top will be blonde. Put a thick layer of peanut butter on top while still hot. I've found that it's easiest to put a bunch of large dollops on top and let them melt for a little bit, it makes it easier to spread. Once coated, stick in fridge to cool for a little while. After it's cool and the pan can be handled without getting burned, drizzle on about a 1/2 cup of the caramel ice cream topping. Stick in freezer while melting about 1 1/2 to 2 cups of frosting in the microwave. Do not completely melt, heat for about 30 - 40 seconds and stir. Remove cake and use a spoon to pour the melted frosting over cake until coated. Caution, this gets messy as it will dribble over the sides, so have wax paper down or anything else to catch the excess frosting. Cool completely and cut into squares. Serve with milk.
