Made baked breaded cauliflower to be a salad topper. And pumpkin cornbread for tonight's dinner.
One of the best comfort foods is a spoon of vegemite in a bowl of mashed potatoes.
Made mini vegan pudding pies. 3 banana and 3 pistachio. The banana was a cooked pudding. The pistachio had pieces of nuts. I only tasted the banana but the fam loved pistachio.
I made vegan pumpkin cupcakes with pumpkin butter filling. They got orange frosting and pink sugar sprinkles. :3
I only got like one friend, so Imma give her a cuppy cake tomorrow.
Made vegan cupcakes with banana pudding filling. Used a chocolate cake box mix for the cupcake. Let it cool. Cored it. Added the pudding. Capped it. Frosted with vanilla. Added a slice of banana on top and chocolate cake crumbs.
Oh! And my advice for the perfect muffins or cupcakes, use ground flax seed as an egg replacement. Flax seed is a good source of omega 3's. In fact it's 3 times more than fish oil.
I made a sweet dish for new years. This is a dessert quinoa.
1. One cup dried white quinoa.
2. 1 and 3/4ths cup of beet juice from a can of beets. 1/4th cranberry juice.
3. Cut up beets.
4. Place all into pot. Bring to boil, then simmer for 15 minutes.
5. Fluff after it's done.
6. Chop up walnuts, dried dates and one big sweet gala apple.
7. Mix in with the already cooked quinoa.
8. Chill and enjoy.
