I just found a simple recipe for Tapicoa
pudding..one of my favs :) I am going to try it possibly this weekend..this or a banana cream pudding/pie...
I haven't decided yet..here is the simple recipe for the Tapioca :)

Tapioca Pudding
1/3 c. sugar
3 tbsp. tapioca
2 3/4 c. milk
1 egg, slightly beaten
1 tsp. vanilla
Combine sugar, tapioca and egg in saucepan. Stir and let stand 5 minutes. cook and stir over medium heat until mixture comes to a full boil. Remove from heat. Stir in vanilla. Cool 20 minutes. Pudding thickens as it cools. Serve warm or chill. 6 servings.

So something I really love to do is cook and bake...
&& This weekend I am going to be cooking dinner for some friends of ours..they cooked us dinner last weekend and now it's our turn..
I am pretty stoked because I haven't gotten the chance to cook for anyone other then John and I in a while...
I am going to be making a recipe a friend of mine gave to me...
The recipe is called "Chicken Pockets" and they sound SO good.. I am going to be making it with steamed carrots and possibly some mash potatoes :)
If you are interested in the recipe I have pasted it at the bottom..Lemme know if you indeed do try it.

Chicken Pockets
Pre-heat oven to 350
What you will need:
4-5 Chicken Breasts
4 tbs. Butter (Softened)
4 oz. Cream Cheese (Softened)
1/8 tsp. Pepper
1 tsp. of Salt
2/3 cup Seasoned or Non-Seasoned Bread Crumbs
2 cans of Crescent Rolls
1 stick of Butter or Marg. (Melted)
1 can of Cream of Chicken Soup (Mix with 1/4 can milk)
Directions:
Boil chicken in salted water until cooked thru. Shred or chop chicken. Whip butter and cream cheese together. Add to chicken, along with pepper and salt. Put bread crumbs on a plate and melted butter or marg. in a flat bowl. Put a large scoop of chicken mixture in a crescent roll and fold sides over. Dip in butter or marg. and then into the crumbs. Place in 9x12 pan. Repeat with each crescent roll.
Bake 30 mins or until crescent rolls are cooked (they should be firm.) Pour soup mixture over pockets or use it as a dipping sauce.
Makes 16 pockets.
