Thats right right kids...its TWO MEALS IN ONE! lol
Take your vampire tenderloin and roll it in black pepper and some coarse salt...then stick it in the oven at 350 for 30 minutes. So easy, right? While thats cooking make some rice and sautee up some mixed veggies to complete the meal. When the tenderloin is done just slice it up, plate and serve.
Now comes the real fun...make vampire carnitas from the leftovers.
Take your leftover tenderloin and shred it. Marinate it in a tiny amount of beer, a tiny bit of molasses, chilli powder, paprika, cayenne, cumin, rotel with habanero, and more black pepper and salt if needed. Flash fry the mix and put it onto fresh corn tortillas (two per taco) with some cheese, diced onions, avocado, cilantro and a squeeze of lime.
