1 cup flour
2 Tablespoons sugar
2 teaspoons baking powder
1 cup yogurt
2 eggs
2 Tablespoons melted butter (or fat of choice)
1/3 cup milk
Whisk together dry ingredients.
Mix together yogurt, eggs, and butter; add to dry
ingredients.
Stir in milk. 1/3 cup is a suggestion but not necessarily the
rule. Add enough liquid to allow the batter to reach desired consistency.
I use an electric skillet heated to between 325 and 350; though today I used eggnog instead of milk resulting in a sweeter thicker batter and lowered the temp to below 325, to avoid burning.
Recipe derived from Joy of Cooking
1975 edition
Oven temperature 450
1 1/2 cups flour
1/2 teaspoon salt
3 teaspoons baking powder
5 Tablespoons butter
3/4 cup plain yogurt plus 2 Tablespoons water or milk
(or3/4 cup milk)
In a large bowl stir together dry ingredients
Add butter to the dry ingredients. Cut and blend until it resembles bread crumbs.
Stir in yogurt and water (or milk) until it forms a dough; like play dough.
Place dough onto a lightly floured surface and fold until the dough is cohesive.
Allow dough to rest for a few minutes before flattening and cutting biscuits.
Place cut biscuits onto a cooking sheet and place on center rack in oven, allowing to cook for approximately 12 to 15 minutes
A "healthy" recipe for overnight oatmeal which calls for the addition of syrup and alcohol. Doesn't sit well with me.
