My dinner tonight :
Starter: Shrimps of passion.
Ingredients : 150gr shrimps, 1 large lemon, pinch of Tandoori, pinch of sweet paprika, 1/2 fresh jalapeño, 1 large glass of rosè wine semi sweet, pinch of mint or parsley. I used both and fresh.
Method : marinate the shrimps for few minutes like 30 to 40. Not more or they become soggy. Use rosè wine in a bowl with shrimps and small enough that they fit bit not let loose. Then add the spices together in one except lemon and mint and parsley. Once min are passed, put it slowly in the pan after you pre-heated the pan on low heat for 5 min. Grind the lemon with cheese grater so the bits of the lemon peel gets on the shrimps while being cooked.
Salad : 1/2 lettuce cabbaged the better. 3 to 4 tomatoes and 1 onion. 1 small packet of organic tofu, 1 beetroot and cleanly peeled and washed and diced or shredded. Sesame oil ,ginger, the other half of jalapeño and avocado, 2 hard boiled eggs, 50 gr spinach.
Method; take the leaves of lettuce carefully and nicely and wash them gently under the running water. Then cut them still carefully not to ruin them. Wash the tomatoes and cut them too but take off the seeds and juices first. The same with the onion but diced. Add the ginger by peeling the skin and chop it or grind it with cheese grater then add sesame oil. Chop the jalapeño and add the spinach after you boiled it for 3 or four minutes if it was frozen. Then turn them into balls like woollen ones? You know… . Free the tofu from the packet but don’t use it all. Take only half. And cut it softly. It’s very easy to crumble get mashed into a clusterfuck. Peel the avocado and cut it in very thin edges into the bowl. The big bone is to throw away unless you want to kill someone or suicide lol. Hope not. Peel the eggs and chop them in circles and drop them on the salad. Use your hands gently as the spoon to move and mix the salad. Careful not to break it.
Part one. Remove the shrimps from the heat and from the pan but leave the liquid there to be used again and put the shrimps in to a different plate and nicely.
Use any white fish you like. As long as it’s fresh. Remove the skin gently by using a special knife to it and then fillet it and make sure there are no bones unless you enjoy choking yourself. These are to be marinated dry.
After you turned it into a fillet of 3 or 2, put it on a plate and add some basil and marjoram,mint and lemon grated peel, grated ginger (Forgive me. my english is fucked). Put the left over small gravy used with shrimps in larger pan by adding more wine and same spices of the shrimps,let it pre-heat for 2 min or 3 then gently put the fish in it on low heat.
Turn it after every 5 min.
Peel the potatoes and dice them. Add garam Masala and cinnamon and pinch of kosher salt. The lesser the better. And parsley. Let it boil but till its al dente.
Turn the fish slowly to the other side please …
Rinse the rise. I prefer using basmati cause it’s health and quick to be ready and then rinse the peas or sweetcorn or beans separately. Bring the rice to the boil but not ready then add peas with it after needing only 5 min heat. Add pinch of kosher salt and pepper, parsley, sage or rosemary.
Remove the fish gently on separate plate and but the lemon that you just grated the peel. Actually cut the remains of the peel and put them on the sides of the plate where shrimps and fish are. The video will show you how they are decorated or so I think they are lol. Then cut the lemon in half and squeeze one half of it on the fish but not too much. Then add the other half of the tofu by cutting it rectangular and to each side where lemon are but inner side between fish and lemon peels. Then cut the tomatoes, let’s say one or two. Depends how big they are. Slice them in circles don’t forget. And put them gently under the tofu without breaking it. Then use the remains of the other half of the lemon and squeeze on the shrimps.
Slice one last small tomato or onion and put the slices on every side of the rice once it’s ready and put in a nice bowl.
Dessert: chop the apples and remove the seeds and grapes and 1 kiwi or cantaloupe or melon. You got what I mean and put them in the bowl and squeeze some sweetened orange into it. Add some mascarpone cream on top but if you got lactose intolerance then use some chocolate sauce.
