Tonight there shall be a "Cooking with Rachy Show lol " I decided to make some Chicken Tetrazzini tonight. It calls for 2 Table spoons of wine. Who just buys a small bottle, So I decided to with a bottle of 2011 Central Coast Cupcake Vineyards Petite Sirah . Oh I better be sure to reserve that 2 Tablespoons I need for this delish recipe I am about to share with all of you. To my lovies up in Ny You all know I love to cook and have my dinner parties. I feel lost down here not being able to do that here. Ok well any ways, about to pour myself a glass of this Sirah. The aroma is amazing flavors of dark cherry blackberry bitter-sweet espresso aged in oak barrles that tastes like eating a dark chocolate cupcake.



Takes a few sips oh yes..... I highly recommend you all go buy your selves a few bottles. Amanda Schwendy I think you would really like it. It also tastes really good with some russell stovers premium assortment of milk and dark chocolate.



Takes a few more sips. Now on with the recipe. this is what you are going to need.....Sip Sip.....Siiiiiipppppppp.



1 1/4 cup butter

1/4 cup all purpose flour

1/2 tsp salt

1/4 tsp white pepper

1 cup chicken broth

1 cup heavy cream

sip sip sip

2 Table spoons wine

Make sure you have that reserved Sip Sip Sip

1 package of angel hair or thin spaghetti

2 cups cubed cooked chicken

15-20 whole moonlight mushrooms

These will be sliced later taste a slice to make sure its cook take a few sips of wine.

1/2 cup parmesan cheese gets this from the deli don't use the sprinkle cheese kind...walmart has a 5 oz package of it by frigo for like 2 bucks.....sip sip sip



Heat the oven to 350

Now melt the butter over low heat blend in the flour pepper and salt. contiue cooking on low heat until bubbly remove from heat. Sip Sip check to make sure you actual have the oven on and just didnt set the temp.



put on a large pot to cook the noodles in fill it with water and turn on the stovetop bring to a boil add a few pinches of sea salt a dribble of extra virgin olive oil. toss in the noodles and set the timer for 7 minutes.



Stir in broth and heavy cream, put pan bake on stove and heat to a boil Count to 60 whipping wine....get the strainer out and in ther sink for the noodles.



get the pour in about 2 tablespoons from your glass as you already poured the served wine in to your class earlier.



while noodles are cooking sliced of the mushrooms do not try to hold you glass and cut them...this is not blood tetrazzini after all

spay a 9x13 pan with pam



pour the noodles and shrooms and 1/2 of the cheese in the wine yummy stuff mix it up good. now pour all of that into the 9x13 pan sprinkle remaining cheese and put in the now warmed oven and bake for 30 minutes. set the timer now sit and finish your 3rd glass of this yummy wine/ enjoy !



Yes I know there are typos but it was meant that was as a bottle of excellent wine was drunk while making this over several hours including eating the meal :)

PS you can also use left over christmas turkey for this recipe as well.
